Sweet potato patties
Ingredients

1 large roasted sweet potato

1 onion, cut into quarters and roasted, then finely chopped

20g baby spinach finely chopped

Half block of haloumi, grated

1 tbsp finely chopped fresh continental parsley leaves

1 tbsp plain flour

1 tbsp olive oil

yoghurt, to serve
Method
- Use a fork or potato masher to mash the sweet potato in a bowl. Add the onion, chopped spinach, haloumi, parsley and flour. Stir to combine. Season
- Fry in pan with a little oil
- Serve
