Sweet potato patties

Ingredients

  • 1 large roasted sweet potato 
  • 1 onion, cut into quarters and roasted, then finely chopped
  • 20g baby spinach finely chopped
  • Half block of haloumi, grated
  • 1 tbsp finely chopped fresh continental parsley leaves
  • 1 tbsp plain flour
  • 1 tbsp olive oil
  • yoghurt, to serve                                                                     

Method

  1. Use a fork or potato masher to mash the sweet potato in a bowl. Add the onion, chopped spinach, haloumi, parsley and flour. Stir to combine. Season
  2. Fry in pan with a little oil
  3. Serve
