Pumpkin fritters

Ingredients

500g pumpkin 2 large eggs 1 clove garlic, minced 3 tbsp chopped parsley 4 level tbsp plain flour 4 tbsp grated pecorino or parmesan cheese Salt and pepper 500ml extra virgin olive oil

Method

Steam pumpkin in pieces in a little water until tender. Remove skin and mash flesh with fork. In a large bowl, beat eggs then mix in garlic, parsley, flour and cheese to obtain smooth paste. Mix in mashed pumpkin flesh. Season to taste. In a pan, heat olive oil and form each fritter using 1 tbsp of mixture. Once golden, place on absorbent paper. Add salt if necessary and serve hot as a snack.
