375 g (12 oz) firm tofu
1/2cup (90 g/3 a:) rice flour
2 teaspoons ground coriander
1 teaspoon ground cardamom
1 clove garlic, crushed
1/2cup (125 m1/4 fl oz) water
oil, for deep-frying
Method
1 Drain the tofu and cut it into 1 cm (1/2 inch) thick slices.
2 Combine the flour, coriander, cardamom and garlic in a bowl; add the water and stir until smooth.
3 Heat the oil in a large pan. Dip the tofu slices into the spice mixture and coat thickly. Place the tofu slices into the oil, 3 at a time, and cook over medium heat for about 2 minutes, or until crisp and golden brown. Drain on paper towels.
NOTE: Serve the tofu with stir-fried vegetables and any sauce of your choice; for example, peanut, chilli or soy sauce—the tofu soaks up the flavours.
