Creamy Kidney Bean Fetuccine

Ingredients

Serves 4 500g fettucine 1 Tbsp olive oil 1 clove garlic, crushed 500g tofu (optional) ¼ cup pine nuts 440g red kidney beans 400g artichoke hearts 300ml cream salt and pepper

Method

Cook fettucine until tender, drain and set aside. Heat oil in saucepan, add garlic (and tofu), and brown. Add pine nuts, beans, artichokes. Add fettucine and combine. Add cream, salt and pepper.
