Sushi style quinoa salad with carrot, cucumber and haloumi

Ingredients

  • Red quinoa, pre-cooked and cold
  • 1 x sweet poatato
  • giant clove of garlic
  • handful of green beans
  • half a large carrot, grated
  • 1 x lebanese cucumber
  • half a cup of chopped parsley
  • olive oil
  • white balsamic vinegar
  • lemon joice from half a lemon
  • 3/4 blcok of halmoui cheese

Method

  1. Cook quinoa to soft - set aside to cool
  2. meanwhile, roast sweet potato and garlic in same tray - a bit of char on sweet potato is welcome
  3. blanch green beans and cool in fridge
  4. add quinoa into bowl and grate carrot to add
  5. chop cucumber small dice and add to bowl
  6. chop green bean and add to bowl
  7. add parsely to bowl, along with sweet potato and garlic
  8. mix through, season, and dress with olve oil and white balsmaic - season
  9. fry cheese in pan until golden, place upon salad in bowls, Dress with lemon jiuce and extra parsley. Serve.
