Nutty potato cakes

Ingredients

450g potatoes 125g butter 75g mixed nuts, ground 25g sunflower seeds, finely ground 2 Tbsn spring onions, finely chopped Black pepper, freshy ground Wholemeal flour for coating Oil for frying

Method

Peel potatoes and cut into pieces - boil until just soft. Drain and mash potatoes with butter and milk to a creamy consistency. Add nuts, seeds, onoins and pepper to taste. If necessary, add more milk to bind. Form into 8 potato cakes. Coat with flour and fry quickly in as little oil as possible. Drain on kitchen paper and serve hot.
