Ingredients
1/2 cup fish sauce (or soy sauce)
1/2 cup rice wine (or sherry)
1/4 cup palm sugar (or brown sugar)
Splash of rice vinegar
Juice from 1/2 lime
1 small shallot (or half onion), finely minced
1 tbsp chili paste
1 tbsp finely minced lemon grass (fresh or dried)
Method
Cut up tofu
Slowly dry fry without any oil in non-stick pan, pressing down with spatula to press out water regularly, until one side is golden and done, flip and repeat.
Place tofu in marinade, stir in thoroughly and make sure it is covered as much as possible, and leave for at least 30 minutes
