- 220g self-raising flour
- ½ cup castor sugar
- 1 cup yoghurt
- 1 egg
- ¾ cup vegetable oil
- ½ cup dessicated coconut
- 1 tsp cinnamon
Sarah's savoury muffins
- butter
- 220g self-raising flour
- ½ cup castor sugar
- ¾ cup milk or buttermilk
- 1 egg
- ¾ cup vegetable oil
- grated zucchini
- corn kernels
- chopped chives
- spinach
Method
- Preheat over to 180 C and grease muffin tins well with butter
- Mix flour and castor sugar in a bowl. Add any additional dry ingredients eg. spices or nuts at this point.
- Combine milk, egg and oil in a separate bowl and whisk lightly. Stir in any wet ingredients eg. berries or bananas.
- Make well in centre of dry ingredients, pour in liquid and mix lightly to form batter. Spoon batter into muffin tins until two thirds full, then bake for 20-25 minutes until browned on top.
- Remove tins from own and turn muffins out onto wire rack to cool..
