Ingredients

Base recipe

  • butter
  • 220g self-raising flour
  • ½ cup castor sugar
  • ¾ cup milk or buttermilk
  • 1 egg
  • ¾ cup vegetable oil

Sarah's strawberry/mashed berry muffins

  • butter
  • 220g self-raising flour
  • ½ cup castor sugar
  • 1 cup yoghurt
  • 1 egg
  • ¾ cup vegetable oil
  • ½ cup dessicated coconut
  • 1 tsp cinnamon

Sarah's savoury muffins

  • butter
  • 220g self-raising flour
  • ½ cup castor sugar
  • ¾ cup milk or buttermilk
  • 1 egg
  • ¾ cup vegetable oil
  • grated zucchini
  • corn kernels
  • chopped chives
  • spinach

Method

  1. Preheat over to 180 C and grease muffin tins well with butter
  2. Mix flour and castor sugar in a bowl. Add any additional dry ingredients eg. spices or nuts at this point.
  3. Combine milk, egg and oil in a separate bowl and whisk lightly. Stir in any wet ingredients eg. berries or bananas.
  4. Make well in centre of dry ingredients, pour in liquid and mix lightly to form batter. Spoon batter into muffin tins until two thirds full, then bake for 20-25 minutes until browned on top.
  5. Remove tins from own and turn muffins out onto wire rack to cool..
