Caramel Filling
Ingredients
- 1 cup brown sugar
- 60g butter at room temperature
- ⅓ cup thickened cream
- ½ tspn vanilla essence
Method
Make caramel filling by placing brown sugar, butter and cream in medium heavy-based saucepan over low heat and whisk until butter melts and sugar dissolves. Increase heat to medium and whisk constantly for 6-8 minutes or until caramel is thick and glossy. Remove from heat and stir in vanilla essence. Transfer caramel to a heat proof bowl and set aside to cool completely.
